Imagine a unique, unparalleled experience and then bottle it. We decided to make something extreme, yet elegant how we like.
The Pinot Grigio grapes for this wine come from a single vineyard cultivated with biodynamic principles in Civranetta estate. Only the best bunches for each vintage, handpicked, destemmed and fermented with indigenous yeasts in Italian Terracotta Amphorae. Once the fermentation is finished, the Amphorae are sealed and the wine will mature with its skins, macerating for around 4 months. The wine is racked one month before bottling without any filtration, no additive and no sulphites. This is why it may contain sediments.
Each sip is a trip from white to red wines. Structure, tannins, then dried fruits aromas, oxidative feelings, forest floors and balsamic nuances. Trying to figure out which pairing is best? The answer is only one: dare.
